Description

The gyro, a Greek sandwich made with meat on a vertical rotisserie, has a long history that’s connected to the cultural exchange between Greece and Turkey in the early 20th century. The word “gyro” comes from the Greek word gyros, which means “turn”, referring to the way the meat rotates on the spit. The meat is usually marinated in herbs and spices like oregano, thyme, garlic, and lemon juice, and then stacked on a spit in the shape of an inverted cone. As it cooks, the juices from the top baste the lower parts, and when it’s done, the outside is sliced into thin, crispy shavings. Gyros are typically served on pita bread with lettuce, tomatoes, onions, and tzatziki sauce.
